Taco Salad with Lime Vinaigrette
An easy, refreshing summer time meal.
Ingredients
Vinaigrette
- ½ cup Chopped Tomatoes
- ½ cup Chopped Cilantro
- 4 tbsp Olive Oil
- 2 tbsp Apple Cider Vinegar
- 2 tbsp Lime Juice
- ½ tsp Salt
- ½ tsp Cumin
- ½ tsp Chili Powder
- ½ tsp Pepper
- 2 cloves Garlic (peeled)
Salad
- 2 cups Chicken (cooked and sliced or shredded)
- 4-6 cups Romaine Lettuce (chopped)
- 1 Green Pepper
- 15 oz Canned Black Beans (drained and rinsed)
- 15 oz Canned Corn (drained)
- ½ cup Diced Tomatoes
- ⅓ cup Diced Green Onions
- Mexican Blend Cheese
- Tortillas or Tortilla Chips
Instructions
- Place all vinaigrette ingredients into a blender and blend until smooth. Set aside.
- Place all salad ingredients in a bowl.
- Pour vinaigrette over salad and toss well.
- Divide salad into individual bowls and sprinkle with cheese and tortillas or chips. If using chips, break the chips into smaller pieces.
I feel like I give all of these five stars! Maybe there should be more stars…for the over the top greats! These are all awesome healthy meals! Soooo good!!!
