Taco Salad with Lime Vinaigrette

Ingredients
  

Vinaigrette

  • ½ cup Chopped Tomatoes
  • ½ cup Chopped Cilantro
  • 4 tbsp Olive Oil
  • 2 tbsp Apple Cider Vinegar
  • 2 tbsp Lime Juice
  • ½ tsp Salt
  • ½ tsp Cumin
  • ½ tsp Chili Powder
  • ½ tsp Pepper
  • 2 cloves Garlic (peeled)

Salad

  • 2 cups Chicken (cooked and sliced or shredded)
  • 4-6 cups Romaine Lettuce (chopped)
  • 1 Green Pepper
  • 15 oz Canned Black Beans (drained and rinsed)
  • 15 oz Canned Corn (drained)
  • ½ cup Diced Tomatoes
  • cup Diced Green Onions
  • Mexican Blend Cheese
  • Tortillas or Tortilla Chips

Instructions
 

  • Place all vinaigrette ingredients into a blender and blend until smooth. Set aside.
  • Place all salad ingredients in a bowl.
  • Pour vinaigrette over salad and toss well.
  • Divide salad into individual bowls and sprinkle with cheese and tortillas or chips. If using chips, break the chips into smaller pieces.

    I feel like I give all of these five stars! Maybe there should be more stars…for the over the top greats! These are all awesome healthy meals! Soooo good!!!
