Ultimate Lasagna
A hearty favorite here on the farm!
Ingredients
- 1½ lbs Ground Beef
- ½ lb Veal (or Italian Sausage)
- 1 large Onion (chopped)
- 3 cloves Garlic (minced)
- 1 tsp Salt
- 1 tsp Ground Black Pepper
- 1 tbsp Dried Basil
- 1 tbsp Dried Oregano
- 1 tbsp Dried Parsley
- 29 oz Canned Diced Tomatoes (with juice)
- 12 oz Tomato Paste
- 24 oz Ricotta Cheese
- 2 Eggs (beaten)
- ½ cup Grated Parmesan Cheese
- 1 lb Mozzarella Cheese
- 16 Lasagna Noodles
Instructions
- Brown ground meat with onion and garlic.
- Add spices, tomatoes with juice, tomato paste and. Stir until well mixed.
- Cover and simmer for 1 hour, stirring occasionally.
- Cook lasagna noodles according to package directions; drain and set aside.
- Grease a 13 x 9" baking pan (depending on how deep, you may need 2 pans)
- Combine the ricotta, eggs, pepper, parmesan, two tablespoons parsley, and 1/2 1b of mozzarella cheese.
- Spread a layer of meat sauce in baking pan, then cheese mixture, then noodles. Repeat additional layers until done.
- Top off with a layer of noodles; sprinkle evenly with remaining mozzarella cheese, covering noodles completely.
- Cover pan with foil and bake at 375° for 40 minutes.
- Remove foil and continue to bake for another 15-20 minutes.
- Remove from oven and let sit for 15-20 minutes before cutting and serving.
