Baked Greek Shrimp and Rice with Tomatoes and Feta

Bake Greek Shrimp and Rice with Tomatoes and Feta

Ingredients
  

  • 6 tbsp Olive Oil
  • 3 lg Shallots (diced)
  • 4 cloves Garlic (minced)
  • 4 cans Diced Tomatoes (drained)
  • 1.5 lbs Shrimp (peeled and deveined)
  • 4 oz Feta Cheese
  • 2 tbsp Greek Seasoning
  • Salt and Pepper (to taste)

Instructions
 

  • Preheat the oven to 400°
  • Put 4 tbsp olive oil in a skillet over medium heat. Add shallots and garlic, season with salt and pepper, and cook while stirring for about 5 minutes. Remove mixture from skillet.
  • Place drained diced tomatoes in the skillet and mix with 1 tbsp Greek seasoning. Cook over medium-high heat for about 10 minutes.
  • Transfer the tomatoes, shallots, and garlic to a baking dish.
  • Place shrimp in mixing bowl. Add 1 tablespoon of olive oil and mix with 1 tbsp Greek seasoning. Stir to coat the shrimp.
  • Arrange shrimp over tomato mixture and crumble feta cheese on top.
  • Cook rice according to directions on package.
  • Bake to 10-12 minutes. Remove from oven and let the dish rest for 5 minutes.
  • Serve in bowls over rice.
