Bake Greek Shrimp and Rice with Tomatoes and Feta
Ingredients
- 6 tbsp Olive Oil
- 3 lg Shallots (diced)
- 4 cloves Garlic (minced)
- 4 cans Diced Tomatoes (drained)
- 1.5 lbs Shrimp (peeled and deveined)
- 4 oz Feta Cheese
- 2 tbsp Greek Seasoning
- Salt and Pepper (to taste)
Instructions
- Preheat the oven to 400°
- Put 4 tbsp olive oil in a skillet over medium heat. Add shallots and garlic, season with salt and pepper, and cook while stirring for about 5 minutes. Remove mixture from skillet.
- Place drained diced tomatoes in the skillet and mix with 1 tbsp Greek seasoning. Cook over medium-high heat for about 10 minutes.
- Transfer the tomatoes, shallots, and garlic to a baking dish.
- Place shrimp in mixing bowl. Add 1 tablespoon of olive oil and mix with 1 tbsp Greek seasoning. Stir to coat the shrimp.
- Arrange shrimp over tomato mixture and crumble feta cheese on top.
- Cook rice according to directions on package.
- Bake to 10-12 minutes. Remove from oven and let the dish rest for 5 minutes.
- Serve in bowls over rice.
