Preheat the oven to 400°
Put 4 tbsp olive oil in a skillet over medium heat. Add shallots and garlic, season with salt and pepper, and cook while stirring for about 5 minutes. Remove mixture from skillet.
Place drained diced tomatoes in the skillet and mix with 1 tbsp Greek seasoning. Cook over medium-high heat for about 10 minutes.
Transfer the tomatoes, shallots, and garlic to a baking dish.
Place shrimp in mixing bowl. Add 1 tablespoon of olive oil and mix with 1 tbsp Greek seasoning. Stir to coat the shrimp.
Arrange shrimp over tomato mixture and crumble feta cheese on top.
Cook rice according to directions on package.
Bake to 10-12 minutes. Remove from oven and let the dish rest for 5 minutes.
Serve in bowls over rice.
