Chicken Fried Rice
Ingredients
- 2 tbsp Sesame Oil
- 2 tbsp Canola or Vegetable Oil
- 1 lb Boneless, skinless Chicken Breasts (diced)
- 3 Garlic Cloves (finely minced)
- 3 Green Onions (sliced)
- 1½ cups Frozen Peas and Carrots
- 3 lg Eggs (lightly beaten)
- 4 cups Cooked Rice
- 3 tbsp Soy Sauce
- Salt and Pepper (to taste)
Instructions
- Add oils and chicken to wok or skillet and cook over medium-high heat or 3-5 minutes until chicken is fully cooked (stirring occasionally).
- Remove chicken with slotted spoon and set aside. Leave oils and cooking juices to remain in wok or skillet.
- Add peas, carrots, and green onions and cook for approximately 2 minutes.
- Add garlic and cook for 1 minute, stirring occasionally.
- Push vegetables to one side of the wok or skillet, and add eggs to the other side. Scramble.
- Add chicken and rice to wok and drizzle with soy sauce. Stir to combine. Cook for another 2 minutes.
