Chicken Fried Rice

Ingredients
  

  • 2 tbsp Sesame Oil
  • 2 tbsp Canola or Vegetable Oil
  • 1 lb Boneless, skinless Chicken Breasts (diced)
  • 3 Garlic Cloves (finely minced)
  • 3 Green Onions (sliced)
  • cups Frozen Peas and Carrots
  • 3 lg Eggs (lightly beaten)
  • 4 cups Cooked Rice
  • 3 tbsp Soy Sauce
  • Salt and Pepper (to taste)

Instructions
 

  • Add oils and chicken to wok or skillet and cook over medium-high heat or 3-5 minutes until chicken is fully cooked (stirring occasionally).
  • Remove chicken with slotted spoon and set aside. Leave oils and cooking juices to remain in wok or skillet.
  • Add peas, carrots, and green onions and cook for approximately 2 minutes.
  • Add garlic and cook for 1 minute, stirring occasionally.
  • Push vegetables to one side of the wok or skillet, and add eggs to the other side. Scramble.
  • Add chicken and rice to wok and drizzle with soy sauce. Stir to combine. Cook for another 2 minutes.
