Salt and Pepper (to taste)
Instructions
Add oils and chicken to wok or skillet and cook over medium-high heat or 3-5 minutes until chicken is fully cooked (stirring occasionally).
Remove chicken with slotted spoon and set aside. Leave oils and cooking juices to remain in wok or skillet.
Add peas, carrots, and green onions and cook for approximately 2 minutes.
Add garlic and cook for 1 minute, stirring occasionally.
Push vegetables to one side of the wok or skillet, and add eggs to the other side. Scramble.
Add chicken and rice to wok and drizzle with soy sauce. Stir to combine. Cook for another 2 minutes.
