Creamy Tuscan Chicken Pasta
Ingredients
- 24 oz Pasta (Penne, or whatever you prefer)
- 8 Chicken breasts (boneless and skinless)
- 4 tbsp Olive Oil
- 2 tbsp Garlic (minced)
- 6 cups Spinach (chopped)
- 1 cup Cherry Tomatoes (quartered)
- 2 cups Chicken Broth
- 2 cups Heavy Cream
- Salt and pepper (to taste)
Instructions
- Cook pasta, strain, and set aside.
- Season chicken with salt and pepper.
- Cook chicken in large skillet with olive oil over medium heat. (5-7 minutes on each side, until cooked through).
- Transfer chicken to plate. Slice into pieces.
- Add spinach, garlic, and tomatoes to the same skillet and cook over medium heat 1-2 minutes.
- Add chicken broth and stir another 2-3 minutes.
- Add heavy cream and stir another 4-6 minutes until liquid is slightly reduced and creamy.
- Transfer pasta and sliced chicken to skillet and toss.
