Creamy Tuscan Chicken Pasta

Ingredients
  

  • 24 oz Pasta (Penne, or whatever you prefer)
  • 8 Chicken breasts (boneless and skinless)
  • 4 tbsp Olive Oil
  • 2 tbsp Garlic (minced)
  • 6 cups Spinach (chopped)
  • 1 cup Cherry Tomatoes (quartered)
  • 2 cups Chicken Broth
  • 2 cups Heavy Cream
  • Salt and pepper (to taste)

Instructions
 

  • Cook pasta, strain, and set aside.
  • Season chicken with salt and pepper.
  • Cook chicken in large skillet with olive oil over medium heat. (5-7 minutes on each side, until cooked through).
  • Transfer chicken to plate. Slice into pieces.
  • Add spinach, garlic, and tomatoes to the same skillet and cook over medium heat 1-2 minutes.
  • Add chicken broth and stir another 2-3 minutes.
  • Add heavy cream and stir another 4-6 minutes until liquid is slightly reduced and creamy.
  • Transfer pasta and sliced chicken to skillet and toss.
