Ingredients
  

  • 4 Boneless, skinless chicken thighs
  • 4 cups Pickle juice
  • 2 cups Buttermilk
  • 2 cups All-purpose flour
  • 2 tsp Garlic powder
  • 2 tsp Paprika
  • 3 tsp Salt
  • 1 tsp Pepper
  • 1 tbsp Powdered sugar
  • 4 tsp Cayenne pepper (optional)
  • 4 Eggs (beaten)
  • Peanut oil (or preferred oil)
  • 8 Brioche (or hamburger) buns
  • Pickles
  • Mayonnaise (we prefer Dukes)
  • Lettuce

Instructions
 

  • Pour pickle juice and buttermilk in a bowl and submerge the chicken.
  • Place the bowl in the refrigerator for at least 30 minutes.
  • Mix the flour, paprika, garlic powder, salt and pepper in a bowl large enough for the chicken
  • Add the egg to a bowl large enough to dredge the chicken and beat.
  • Pre-heat air fryer to 400℉
  • Dredge chicken in egg and then the flour mixture.
  • Place the chicken in the air fryer basket and spritz with peanut oil.
  • Air fry for 15 minutes.
  • Open the air fryer and flip the chicken.
  • Air fry for 5-7 minutes until the chicken is crisp. Use a meat thermometer to ensure the chicken has an internal temperature of at least 165℉.
  • Toast the buns, if desired.
