Italian Seafood & Potato Stew

Ingredients
  

  • 1 tbsp Olive Oil
  • 6 Small Red Potatoes (Diced)
  • 2 Celery Stalks (diced)
  • 1 Onion (diced)
  • 3 cloves Garlic (minced)
  • 1 Bay Leaf
  • 1 tsp Dried Oregano
  • ½ tsp Dried Thyme
  • 28 oz Canned Diced Tomatoes (with juice)
  • 4 cups Chicken or Vegetable Broth
  • 8 oz Clam Juice
  • Salt & Pepper (to taste)
  • 1 Lemon (juiced)
  • lbs Cod Fish (cut into cubes)
  • 1 lb Shrimp
  • Kalamata olives (sliced)

Instructions
 

  • Heat olive oil in a large soup pot and add onion, garlic, celery, and potatoes. Season with thyme, oregano, salt, and pepper and saute for about 10 minutes.
  • Add tomatoes, clam juice, lemon juice, and broth. Bring to a boil, then reduce heat to simmer. Cook for about 20 minutes, until potatoes are soft.
  • Add fish and olives and stir. Cook for another 20 minutes.
  • Add salt and pepper to taste.
  • Serve with Italian bread.
