Italian Seafood & Potato Stew
An amazing, hearty stew, packed with flavor.
Ingredients
- 1 tbsp Olive Oil
- 6 Small Red Potatoes (Diced)
- 2 Celery Stalks (diced)
- 1 Onion (diced)
- 3 cloves Garlic (minced)
- 1 Bay Leaf
- 1 tsp Dried Oregano
- ½ tsp Dried Thyme
- 28 oz Canned Diced Tomatoes (with juice)
- 4 cups Chicken or Vegetable Broth
- 8 oz Clam Juice
- Salt & Pepper (to taste)
- 1 Lemon (juiced)
- 1½ lbs Cod Fish (cut into cubes)
- 1 lb Shrimp
- Kalamata olives (sliced)
Instructions
- Heat olive oil in a large soup pot and add onion, garlic, celery, and potatoes. Season with thyme, oregano, salt, and pepper and saute for about 10 minutes.
- Add tomatoes, clam juice, lemon juice, and broth. Bring to a boil, then reduce heat to simmer. Cook for about 20 minutes, until potatoes are soft.
- Add fish and olives and stir. Cook for another 20 minutes.
- Add salt and pepper to taste.
- Serve with Italian bread.
