Italian Seafood & Potato Stew

- 1 tbsp Olive Oil
- 6 Small Red Potatoes (Diced)
- 2 Celery Stalks (diced)
- 1 Onion (diced)
- 3 cloves Garlic (minced)
- 1 Bay Leaf
- 1 tsp Dried Oregano
- ½ tsp Dried Thyme
- 28 oz Canned Diced Tomatoes (with juice)
- 4 cups Chicken or Vegetable Broth
- 8 oz Clam Juice
- Salt & Pepper (to taste)
- 1 Lemon (juiced)
- 1½ lbs Cod Fish (cut into cubes)
- 1 lb Shrimp
- Kalamata olives (sliced)
Heat olive oil in a large soup pot and add onion, garlic, celery, and potatoes. Season with thyme, oregano, salt, and pepper and saute for about 10 minutes.
Add tomatoes, clam juice, lemon juice, and broth. Bring to a boil, then reduce heat to simmer. Cook for about 20 minutes, until potatoes are soft.
Add fish and olives and stir. Cook for another 20 minutes.
Add salt and pepper to taste.
Serve with Italian bread.
