Ultimate Chicken Tacos
These tacos are amazing. You can substitute the chicken with fish if you'd like.
Ingredients
- 2 lbs Chicken Breast (boneless, skinless)
- 4 tbsp Oil (vegetable or canola)
- 2 small Limes (juiced)
- 2 cloves Garlic (minced)
- 3 tsp Chili Powder
- 2 tsp Ground Cumin
- 1 tsp Paprika
- ½ tsp Cayenne (optional)
- Green Onions
- Black Olives (sliced)
- Tomatoes (chopped)
- Romaine Lettuce (chopped)
- Avocado
- Pico de Gallo (or Salsa)
Instructions
- Season the chicken with salt and pepper on both sides.
- In a mixing bowl, whisk together oil, lime juice, garlic, chili powder, cumin, paprika, and cayenne to create the marinade.
- Place chicken in large ziplock bag and pour the marinade over the chicken. Seal the bag and place in refrigerator for 30 minutes.
- Heat the grill to medium-high heat and cook chicken until done (about 20 minutes).
- Add tortillas to the grill and warm each side.
- Cut chicken into pieces.
- Serve on warm tortillas topped with chopped lettuce (or cabbage), black olives, tomatoes, avocado, green onions, and pico de gallo/salsa.
Notes
This goes great with black beans, refried beans, or Mexican rice.
