Chicken Souvlaki Salad

This is a favorite here at the farm. If you prefer steak, follow the same recipe, replacing the chicken. Optionally serve with pitas or french fries.

Chicken Souvlaki Salad

Ingredients
  

Marinade

  • ¼ cup Olive Oil
  • 1 Lemon (juiced)
  • 2 cloves Garlic (finely minced)
  • 1 tbsp Greek Seasoning

Salad

  • 1 lb Boneless Chicken Breast
  • 1 head Romaine Lettuce
  • ½ cup Red Bell Pepper (thinly sliced)
  • ½ English Cucumber (sliced)
  • 8 oz Cherry Tomatoes (halved)
  • Tzatziki Sauce
  • Feta Cheese

Instructions
 

Marinade

  • Mix olive oil, lemon juice, garlic, and Greek seasoning in bowl.
  • Place chicken in a zip lock bag and pour marinade over the chicken.
  • Seal the bag and marinade chicken in refrigerator for 2-4 hours.

Salad

  • Lightly oil grill grate
  • Preheat grill (high heat)
  • Cook chicken until juices run clear (about 5 minutes, turning once)
  • Combine romaine lettuce, bell pepper, English cucumber, and cherry tomatoes into a salad bowl and toss.
  • Divide salad into 4 portions and top with cooked chicken
  • Add a dollop of tzatziki sauce to each bowl and sprinkle feta cheese on top

Notes

If you don't have Greek seasoning on hand, make it with this recipe.
